
James is away in Ocala this week. He left late last night after work. He will be returning home late Thursday night to get back for work here on Friday.
When James is gone, I try to keep myself busy. The house, for some reason, never looks better than when he's gone. I become a cleaning fool. This week I'm a cooking fool.
I hope to make homemade bread tomorrow.
This morning, after washing dishes, sweeping the floor, taking a shower and lighting some candles (for no particualar reason other than I like the smell), I mixed up a batch of cookies. I didn't really want to spend all day making them so I baked all the dough in a pan; thus, cookie bars.
As I was making the cookies, I realized that I had used the last of my vanilla extract during Christmas and had never replaced it. Oh dear! What to do, what to do?? Aha! There, in my cupboard, was some Almond Extract I received at my bridal shower from my mom to make Swedish Kringler. So, 2 tsp. of almond extract went into the batter in place of the vanilla.
The kids and I tested the cookies after lunch today and they really taste good with the almond extract. Hey! Desperate times call for desperate measures.

Mmmm, now I'm hungry!!! I am the same way. The more Chris is gone at work, the cleaner the apartment is and the more I am able to get done. Even with three kids underfoot! Why is that???
I just do it to keep from getting bored or too lonely. Hoping to make the time go faster til he gets back.
