inquiring minds want to know

I've had a couple inquiries about Buckeyes. What are they? I will answer: The Buckeye candy is basically a chocolate dipped or covered peanut butter ball. It's like a homemade Reese's Peanut Butter Cup. Some variations to this candy include crushed Corn Flakes or Rice Krispies in the peanut butter ball. I didn't really want crunch so I made the original recipe.
Did you know?: The Buckeye Candy is a specialty of the Ohio State.
It is made to resemble the nut of an Ohio Buckeye tree which is found throughout the Buckeye State.
For those who feel so inclined-
Buckeye Recipe
2 C. Creamy Peanut Butter, (not all-natural)
1/4 C. Butter, softened
3 3/4 C. Powdered Sugar
2 C. Semi-Sweet Chocolate Chips
2 T. Vegetable Shortening
(I never said they were good for you!)
Directions
LINE baking sheets with wax paper.
BEAT peanut butter and butter in large mixer bowl until creamy. Beat in powdered sugar until mixture holds together and is moistened. Shape into 1-inch balls; place on prepared baking sheets. Freeze for 1 hour.
MELT morsels and shortening in medium, uncovered, microwave-safe bowl on HIGH (100%) power for 1 minute;
STIR Morsels may retain some of their shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until melted.
DIP peanut butter centers into melted chocolate using a toothpick, leaving a small portion of the center uncovered. Shake off excess chocolate and scrape bottom of candy on side of bowl. Return to baking sheets; refrigerate until chocolate is set. Store in covered container in refrigerator.

Aha! I thought they looked like peanut butter balls! We've always made them totally covered in chocolate, but they're certainly more interesting-looking as buckeyes. thanks for sharing the recipe!

Yes, Laurel, I thought about completely covering them but didn't have enough chocolate chips...
