I've been challenging myself to cleaning out my pantry and freezer before going grocery shopping again.
I have quite a bit of odds and ends and it's proving to be fun for me to make things up
and also to use the resource of allrecipes.com. I love that website!
I found this recipe on that site and used it for lunch yesterday.
I had to tweak it a bit since I didn't have a full can of tomatoes. I also used more spinach than was called for and some garlic powder.
To be honest, I wasn't sure if the kids would like it but I was pleasantly surprised! All three enjoyed two helpings!
