another one of THOSE meals

I was prepared! I had 100% steroid, hormone and antibiotic-free ground turkey and ground chicken thawed. I had salsa. I had a can of whole kernel corn. I had a little cheddar and a lot of mozzarella cheese (pre-shredded). I had whole wheat tortillas. My plan:
Fry up the meat, add the salsa and corn.
Roll the meat mixture in the tortillas.
Nuke the bean-less burritos and serve!

However, as I waited on the meat to get done, I realized that the tortillas were too old and stale to use. The use by date on the package was April 16, 2009. It's June. No good! I was miffed! The one night I was prepared for dinner and I wasn't! What was I going to do now?? James calls from the living room where he is keeping the kids occupied and out of my way, "How about some pasta?"
"Pasta?" I 'yell'! "Who wants to eat mexican meat with pasta?" But, that really was my only other option since I wasn't going to the store just to get some tortillas! I was tired just thinking about that and the kids were getting hungry! So, I cooked up some angel hair noodles. I served the mexican meat with a side of pasta onto the plates with a worried thought that the kids wouldn't like it.
What was I thinking???? Throughout the entire meal the kids kept telling me, "Dis is so good!" I was so relieved and thankful. Good thing James was home to offer some advice. I'll have to keep that meal on hand from now on. It's so simple, too! The kids had thirds and James had fourths!
