country griddle blueberry applesauce pancakes

I was in the mood for IHOP's Country Griddle cakes last night. They no longer serve my favorite pancakes there, so I looked online to find the recipe. After finding it I decided to tweak it a little to make them a little more healthy and possibly substantial. Once I made them and served them to the kids I was impressed with how well they ate them. They each had about 5 servings!!!!

Country Griddle Blueberry Applesauce Pancakes

1 1/4 C. Whole Wheat Flour
1 1/2 C. Buttermilk
1/3 C. Cream of Wheat or Malt-O-Meal
1 Egg
1/3 C. Brown Sugar
1 t. Baking Powder
1 t. Baking Soda
1/4 C. Applesauce
1/2 t. Salt
Blueberries

Stir Flour, Buttermilk and Cream of Wheat together. Cover and let sit overnight or at least 8 hours. Stir in egg, sugar, baking powder, baking soda, applesauce and salt. Whisk together. Fold in blueberries, adding extra milk for desired thickness. Cook on warm skillet.

The batter is a bit sticky due to the lack of oil so I had to re-apply oil onto the skillet for every pancake I made but they were still so good.
