christmas eve

Christmas Eve at our house was pretty relaxed. We took the kids to the beach mid-morning to play and run off steam. We had lunch at home and then went to the mall and walked around. Henry wanted to visit Santa. He, as my mom said, had some business with Santa. Marcail wanted nothing to do with the jolly old elf. Naomi went with Henry but neither one wanted to speak to him once they got to him. That was frustrating after standing in line a few minutes waiting! All well, it wasn't that important in my book and we didn't have any pressing things to do anyway!
That evening, for supper, I made Flesk Pan Kaka which is a Swedish oven pancake dish. My family has this meal every Christmas Eve or morning. I wanted to keep that tradition as ours since James likes the dish too. The kids love it as well. I also made fruit smoothies which the kids call pink juice.



After we finished eating I quickly cleaned up the kitchen and table and then we went for our normal evening family walk. We were in hopes we'd be able to see some Christmas lights. We saw a few but not as many as we had hoped. It was nice to have family time together and when we got back we all settled down for a long winter's nap, in hopes that St. Nicholas soon would be here......
Flesk Pan Kaka
1 lb Bacon, fried and crumbled
10 Eggs
4 C. Milk
3 C. Flour
Preheat oven to 450 degrees. Beat eggs; add milk. Sift in flour. Pour bacon grease and crumbled bacon into 9x13" pan. Pour egg mixture into 9x13" pan with hot bacon grease. Bake 30 minutes. Serve with maple syrup.
