family life

Our landlord's sister got a new puppy.
Her name is McGee.
She's stinkin adorable!

They were pretty much the best pizzas I've ever made.
Henry just really, super loves his baby brother.
He will sit and stare at him
and talk and play with him for such a long time.
He can't wait to be able to really play with him!

Christmas meat


Everything needed for Christmas baking and cooking

pepperoni rolls

One of our favorite Christmas treats around here is Pepperoni Rolls!

Sometimes I make this into a couple loaves.
However they're prepared, they rock!





  • Pepperoni Rolls
  • 1 (.25 ounce) package active dry yeast
  • 1 1/3 cups warm water (110 degrees to 115 degrees F)
  • 1 tablespoon sugar
  • 1 tablespoon olive or vegetable oil
  • 1 teaspoon salt
  • 3 1/2 cups all-purpose flour
  • 1 package sliced pepperoni
  • 1 package sliced cheese, any flavor


In a mixing bowl, dissolve yeast in warm water. Add the sugar, oil, salt and 2-1/2 cups flour. 
Beat until smooth. 
Stir in enough remaining flour to form a stiff dough. 
Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. 
Place in a greased bowl, turning once to grease top. 
Cover and let rise in a warm place until doubled, about 1 hour.

Once risen, place dough on lightly floured surface and divide into approximately 24 balls.
Flatten a roll of dough, place 2-3 pepperonis in the middle.
Sprinkle with a pinch of cheese on top of pepperoni
 and pinch dough closed.
Place into a greased pan.
Once pan is full, bake at 375 for 15-18 minutes.

thanksgivin' plans

For Thanksgiving this year, we are hosting it at our house.
I am so excited!  I love being able to cook for my family.
My mother-in-law and aunt-"in-law" both work full-time.
This doesn't give them a lot of opportunity to plan and prepare 
a big dinner.
 So I feel like this is my way to take the stress off the Holiday
for them so they can enjoy it.

Here is the menu I have planned:

Ham
Potato Casserole
Sweet Potatoes
Sweet Corn
Green Beans
Jell-O
Cranberries
Homemade Rolls

tricking my kids {and the hubs}

How did I do that?
Why by making black bean "meatballs"!
Meatless meatballs were well received in this house.
I was so pleasantly surprised.
I mashed up two quart size baggies of beans from
when I had made black beans in my crockpot.
Then, I just put all the same spices and ingredients I do
for regular meatballs.

a couple fun experiments

Popcorn is one of my favorite snacks.
Henry and Marcail love popcorn as well.  Naomi has decided she's not a huge fan.
I'm running low on snacks due to cleaning out my pantry.
The one thing I do have on hand are popcorn kernels.
I started thinking that maybe Naomi would like kettle corn.
I looked up allrecipes.com for a kettle corn recipe and popped up a batch.
We were all major fans, even Nay!  It was so delicious and super easy to make!

I am out of jelly as well, but have plenty of strawberries.
So, I decided to make a batch of freezer strawberry jam.
It took me probably about 20 minutes or less to make this.
It's still setting up so I hope that it will be good!
I'm sure it will be.

creamy spinach pasta

I've been challenging myself to cleaning out my pantry and freezer before going grocery shopping again.
I have quite a bit of odds and ends and it's proving to be fun for me to make things up
and also to use the resource of allrecipes.com.  I love that website!
I found this recipe on that site and used it for lunch yesterday.
I had to tweak it a bit since I didn't have a full can of tomatoes. I also used more spinach than was called for and some garlic powder.
To be honest, I wasn't sure if the kids would like it but I was pleasantly surprised!  All three enjoyed two helpings!

fresh from the oven

I've been in a baking mood for the past 2 weeks.  The very first thing I felt inspired to make
were granola bars.  I found the recipe here and let me just say, YUMMY!  
My kids aren't really granola bar fans, Quaker or otherwise.
But, these ones were gone within a week!
James asked me to make a dish called Chuckwagon Roundup.
He remembers this from his childhood.
It was pretty good but for some reason our kids weren't fans.
James and I are the only ones who savored this childhood favorite.

Next on my list of domestic pursuits was Whole Wheat Tortillas.
I made them with 100% Whole Wheat flour.  I used no white flour.
I was afraid of them.
I felt intimidated by the fact that I did not have a tortilla press.
I was worried that they'd be tasteless or fall apart.
This first tortilla looks rather sad but it sure tasted good and certainly
did not fall apart.  My batch made 12 tortillas.  I made them
Tuesday, the 5th.  They were all consumed by the 10th!

I have been excited to make this classic!
It is chocolately, marshmallow, fudgy perfection!
I am in love.

Lastly, I tried my hand for the the very first time at 
The dough was super sticky and not very easy at all to work with.
But, I 'kneaded' through and came out with some heavenly rolls.
I will make these again the next time I host a family dinner.

baker man

The Hubs enjoys baking and cooking.  As the full-time breadwinner of the family he doesn't have much free time to do such things.  I guess he's been hankerin for some peanut butter cookies since they are his favorite.  Therefore, he made up a batch Sunday evening.  I giggle when I think how meticulously he did his job.  The chocolate chips were my idea and he was happy to comply.
He's a happy baker!
Maybe I should make a list of foods I would like him to make......

Also, I'm thinkin Henry was having a mild case of gas. I mean, look at his expression!.

i remember when....

Back when I was a wee lass, my family and I
went to Ohio to visit my
Great Aunt Arlene, Uncle Doyle and my Mema.
It was a trip we took often.
Our time, my sister's and mine, was
spent primarily at Aunt Arlene's watching TV.
We did other things, sight-seeing and
playing with Mema's doll-babies as well.
However, some of my fondest memories
were spent at my Aunt's home.
Liv and I got to spend the night on occasion
and she treated us like princesses.
Really and truthfully, it was good ole spoiling
that was being done but we sure appreciated it!
Anyway, one of the times we visited it was close to Christmas.
Aunt Arlene had already begun her Christmas baking and
one goody that has stood out in my memory for all these years
are her pepperoni rolls.
Those things were fantastic!
They were the perfect finger food and when you
bit into them your taste buds were in for a nice
pepperoni surprise.
The bread was sweet and the spice of the pepperoni
was a perfect combination!
As I grew and became more proficient in the kitchen,
I started experimenting to try to come up with the same
recipe.
I've never been overly pleased with my outcomes.
I used crescent rolls from a can for years.
I'd roll a pepperoni into one roll at a time but
they just didn't quite do it for me.
They weren't quite right.
One time my mom and I used Rhode's Rolls
to mimic Aunt Arlene's Pepperoni Rolls.
I laugh when I think how long it took to make those things!
We had to wait for the frozen dough to rise and then
we'd divide the little balls into thirds and so on and so forth.
Needless to say, looooooooong process.
I somewhat wrote those rolls off my list
for a couple years but,
my hubs loves pepperoni.
He's also quite fond of cheese.
I began to think maybe I could make a bread with pepperoni
and cheese in it.
Like a calzone without the marinara inside.
I was browsing through my favorite food blogs
when I happened upon a recipe for pepperoni cheese bread!
I thought, "Wow! This it it!"
Rolled loaf of pepperoni and cheese! Splendid!
The recipe I had seen used frozen bread dough and I
really didn't want to mess with that.
So, I found a basic white bread recipe that I could put in my
bread machine on the 'dough only' setting.
Then, I rolled the dough out onto my floured counter,
spread a generous helping of cheese and pepperonis onto the dough.
I rolled up the pepperoni glittered dough and placed it into a bread pan.
Of course, I let it rise again and then baked it.
I can't believe how really easy this was to make.
"Thank you my handy bread machine!"
This bread may not be quite the same as Aunt Arlene's Pepperoni Rolls,
but, it was certainly, in my mind, inspired by her rolls.
I wouldn't have made this if it hadn't been for those simple yet
tantalizingly delicious rolls I'd eaten all those many years ago.

i'm a mess

When it comes to cooking, I'm crazy in the kitchen.
I may start out orderly but everything ends up getting
spread all over.
Puppy Chow is one of my favorite guilty pleasures and it's so easy to make.
It only requires 5 ingredients and no more than 15 minutes to assemble if you have no interruptions.
It never fails, though, that even something as simple as Puppy Chow
produces a chocolatey, peanut buttery, powdered sugar mess.
But, it is so worth it when I can sit down and munch away on this stuff!

thanksgivin 2010

I must be having an off month for taking pictures.
I either fail to take any or the 5 that I do take turn out all wrong.
This is the case for the Thanksgiving photos I shot
today.  They are all fuzzy and blurred.  GRRRR!!!
Anyway, my first Thanksgiving as the head chef
was a success!
The only slight mishap was when my water and butter that came to a 
boil started a burner fire.
It was quickly taken care of and nothing was harmed.  Not even
any arm hair!
We all laughed and agreed
that my kitchen had been officially initiated.


Lynn (James' mom) brought this 
cute cheese ball/relish plate.
It was the only turkey we saw or ate today!




My only regret for today is that I didn't make the time
to get one photo of Lynn and any group pictures!!
I did get a few pictures, though. Five, to be exact.
